Apple Slices and Dipping Sauce


1 Medium Sized Apple
4 tablespoons peanut butter or substitute
As an alternative, 2 tablespoons honey

Giving your child something to dip makes eating more fun :)

Slice the apple up thin. The thinner you slice it, the more time your child will take to eat.
Eating slower is healthier.

If your child is allergic to peanuts, try another type of nut, but make sure your child is not allergic 1st.

Hummus Sandwich


Corn-syrup free wheat flat bread or pita
Hummus
Spring Mix Salad
A few Basil Leaves
2 teaspoons Healthy Margarine

On one half, spread hummus. On the other, lightly spread healthy margarine.
Add Spring mix salad and a few basil leaves for taste. If you have any brown rice or beans, consider adding them to a pita pocket.

Super Salad Sushi


1 cup uncooked brown rice
1 tablespoon brown rice vinegar
2 teaspoons sugar
1 Avocado

About 5 Sheets Nori Roasted Seaweed

Prepare brown rice from instructions on package. I normally use a brown rice cooker. If you want to be really healthy, purchase a gaba brown rice cooker, which cooks rice slower leaving more nutrients in the rice.

Mix the vinegar and sugar into the brown rice. The sugar helps the rice become more sticky. If your rice is slightly overcooked, you may prefer to not add sugar. Let the mixture cool.

Prepare the brown rice onto a Nori sheet, spread hummus lightly in the middle, add a few slices of avocado and a couple leaves of lettuce, and then roll.

Spring Mix Salad with Basil

Try this.
Give your child a little leaf of basil to taste. If they like it, add a couple leaves to a salad.
Ask if they want more next time.

Oil / Vinegar Dressing:
A little balsamic vinegar and olive oil (half and half)
Pinch of Sea Salt
Pinch of Crushed Black Pepper

1-2 minced garlic cloves
1 teaspoon crushed black pepper

Blend in blender or food processor. Done!
